Filling:
1/2 pound dried fruit (dates,apricots, figs, prunes, cherries, etc.)
1 cup water
1/2 cup brown sugar
1 TBS finely grated orange peel
Cook until thick; then add 2 Tbsp. orange juice
1 tsp lemon juice
Cool before spreading. The filling should be prepared before beginning to mix the other ingredients.
For the crusts:
1/2 cup butter at room temperature
1/2 cup honey
1 tsp. Vanilla extract
1 large egg
3/4 cup all purpose flour
1 1/4 cup Sierra Crunch granola
Heat oven to 350 degrees. Line an 8 or 9 inch square pan with parchment. Lightly grease the parchment.
Beat butter, honey and vanilla until well blended.
Mix in egg, flour and granola and gently incorporate.
Divide the mixture in two and spread half of it on the bottom of the baking pan.
Place the dried fruit filling on top.
Spread the remaining half of the mixture on the filling.
Bake 25-20 minutes until toothpick inserted near center comes out clean.
